My Daughter’s B-Day
My daughter celebrated her birthday this week and we had to wait until the weekend to have a party. As I type this, I am waiting for 8 little guys to show up and terrorize my backyard for the afternoon. I can’t wait!!!
Kid’s birthdays seem to be so out of whack these days. The $ you can spend on parties is astronomical and I’m not sure what difference it make to the kids. Just as long as their friends can come and play, right? I’m keeping it simple. We’re doing a kid party this afternoon and then a family BBQ tonight once their dad is home. Here are the cakes I’ve made to serve:

Barbie Cake

Ice Cream Cupcake
The Barbie cake is for the BBQ tonight and the Ice cream cupcakes are for the kid party. Either way, it’s fun, fun, fun.
Now, your cake decorating skills may not be up to making the Barbie cake but the cupcakes are a snap so I’ve included the recipe. I’ve used icing to make the tops look like soft serve ice cream with sprinkles BUT, if you can scoop ice cream, it’s just as easy to place a scoop of real ice cream on top just before serving and then everyone gets cake and ice cream!!!
Recipe: Ice Cream Cupcakes
Ingredients
- 18 ice cream cones with flat bottoms
- 1 recipe of your favourite cake batter, any flavour
- OR
- 1 box of cake mix, any flavour
- 1 cup of water
- 3 eggs
- 1/2 cup of sour cream
- 1/3 cup of vegetable oil
- Icing or Ice cream, for decoration
Instructions
- Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper and set the 18 cones on top. (If using a mix, in a large bowl, combine the cake mix with the remaining ingredients and whisk until smooth.) Gently pour the cake mix batter into each cone 2/3 full (Very important: Do not fill more then 2/3rds full or they will overflow and be ruined!) Bake for 20-30 minutes or until the batter is set. Cool and then decorate.
