Spaghetti Sauce

Sometimes, it’s just time for some sauce, don’t you think? When there is nothing inspiring at the grocery store and the weather is bleak, there’s nothing better than some sauce on pasta to warm the cockles of your heart!

My grandmother is the queen of sauce. She makes it sweet and savoury and good enough to eat in a bowl with a spoon. In fact, when I was a kid, that’s exactly what I did. After the first helping of sauce with spaghetti noodles, the next serving was sauce on it’s own, sometimes with some bread for dipping.

I woke up this morning to a dismal sky and an appetite for some comfort food. I had defrosted a couple of pounds of ground beef the night before so, with that in mind, I raided my fridge and cupboards to find the rest of my ingredients for the sauce.

Here’s what went into my sauce today:

Recipe: Amber’s Spaghetti Sauce

Ingredients

  • 2 tbsp. of olive oil
  • 2 yellow onion, diced
  • 6 celery stalks, diced
  • 1 tbsp. of Italian Flavour
  • 6 cloves of garlic, minced with sea salt
  • 1 lb. of ground beef
  • 10 mushrooms, chopped
  • 4 – 10 oz. cans of tomato sauce
  • 1 jar of sweet tomato relish (homemade from my Grandma)

Instructions

In a large stock pot, heat the oil over medium heat and saute the onions for 5 minutes. Add the celery, Italian Flavour and garlic and continue to saute until it begins to stick to the bottom of the pot. Add the ground beef and cook until it is no longer pink and beginning to caramelize. Add the mushrooms, sauce and relish. Simmer the sauce on low for 2 to 4 hours and serve with your favourite pasta.

    tomato sauce from a can!? this surprises me….i would have thought from scratch!

    Tomatoes from a can are actually superior in ripeness and quality than most fresh tomatoes we can buy. The fact is, they are canned within hours of being picked and the fruit itself is picked when ripe not green, like the fresh tomatoes you buy at the supermarket. So, unless you can buy local, fresh, vine-ripened tomatoes or grow your own, it’s always better to make sauce from canned ones. You never have to apologize for using canned tomatoes!!!

    i also used canned tomatoes but not pre-made canned tomato sauce is what i meant. Fresh tomatoes for sauce sounds like too much work lol
