(pronounced ‘choice-says’) 

is my take on life and food. It’s always about choice. A wise person once said, “It is better to choose the good, not the easy”. This site is about trying and practicing those kinds of choices.

In the movie, “Kate and Leopold”, a decidedly mediocre movie about a man who falls through time to find the woman of his dreams, I found the most profound statement about food. As Leopold (played by Hugh Jackman, so it’s not THAT mediocre!) catches a glimpse of the 21st century, he comments about how food is prepared and enjoyed in his world. Quite frankly, I couldn’t say it any better myself. . . 

Where I come from, the meal is the result of reflection and study, menus are prepared in advance, timed to perfection. It is said, without the culinary arts the crudeness of reality would be unbearable. – Leopold

If we have lost one thing in our current world of food, it is a passion for the quality that we put in our mouths. With the proliferation of junk and fast foods, we have begun to fuel ourselves without care. As long as what we put in our mouths satisfies our immediate palate, we eat it, with virtually no thought to what it’s lasting effects might be.

Upon reflecting on Leopold’s words, I believe we can choose the better good by investing in our meals. I want to strive to do that in my own quest for the art of food. It should never be about arrogance but about exploration.  Want to join me?
